Chocolate Protein Cupcakes
as seen on Tone It Up!
1 Ripe Banana
1/3 Cup unsweetened cacao powder
1/3 Cup strong, chilled coffee
1 Teaspoon baking powder
1/2 Teaspoon sea salt
Preheat oven to 350 degrees. Combine all wet ingredients and set aside. In a separate bowl mix all dry ingredients before adding to the dry mixture. Combine, but don’t over mix! Line a cupcake pan with liners and fill each cup 3/4 full. Bake for 30 minutes or until toothpick comes out clean!
(At high altitude I baked on 375 degrees for 25 minutes)
Oatmeal, Raisin & Dark Chocolate Cookies
1 1/2 Cups oat flour (I make my own by blending the oats)
3/4 Cup rolled oats
1/2 Teaspoon baking powder
1/2 Teaspoon salt
½ Cup raw sugar
1/3 Cup chocolate chips
1 Teaspoon canola oil
1/3 Cup coconut milk
1/2 Cup banana puree (1 large banana)
1 Teaspoon vanilla extract
Preheat oven to 375 degrees. Combine all ingredients in large mixing bowl. Spray cookie sheet with coconut oil and use tablespoon to proportion evenly. Bake for 12 minutes or until golden brown.
Avacado Chocolate Pudding
Avocado Chocolate Pudding from the ebook: Badass Brunch by PaleoBOSS Lady®
Almond butter: 6 tablespoons
Honey: 4 tablespoons
100% organic Cacao Powder: 5 tablespoons
Mix together all ingredients but avocado.
Mash avocado until no longer lumpy.
Mix with the remaining ingredients.
Plate in small bowls with a few berries added for garnish w/mint.
